Saumon-curry coco

 Serves : 4     

  Prep Time : 10 minutes      

  Cook Time :  30 minutes 

Ingredients :

– 4 skinless Salmon Fillets (100g each)

– 6 tablespoons of Oil

For the Sauce :

– 2 cups of Coconut Cream « Real Thai ® »

– 4 tablespoons of Red Curry Paste « Real Thai ® »

– 2 tablespoons of Fish Sauce « Real Thai ® »

– 2 tablespoons of Palm Sugar

– 3 chopped Makrut Lime leaves

For the Dressing :

– 3 chopped Makrut Lime leaves

– 2 Red Chilis finely chopped (deseeded)

Garnish :

– Coconut Cream « Real Thai ® »

Instructions :

Heat the oil in a large pot over a medium flame. Once it is hot (the oil starts to smoke),

fry the salmon until it is slightly pink but not entirely cooked. Put aside.

Instructions for the Curry : 

Cook ½ cup of coconut cream in a pot over a medium flame until the oil seperates. Add the curry paste and cook until you smell the curry. Pour in the rest of the coconut cream and stir.

Season with fish sauce and palm sugar. Stir well to dissolve.

Add the fried salmon and gently mix it with the curry, taking care to not break the fish into pieces.

Add half of the chopped makrut lime leaves and chilis. Stir a little. Turn off the flame.

Garnish :

Place onto a plate. Garnish with coconut cream and sprinkle with the rest of the makrut lime leaves and chili.

Serve with Thai Jasmine Rice « Golden Rose ® ».
